1 Tbsp. vegetable oil
1 cup chopped onion
1 clove garlic, minced
2 cans (29 oz. each) Veg-All® Mixed Vegetables, drained
1 can (14.5 oz.) Del Monte® Diced Tomatoes, not drained
3 cups water or vegetable broth
1/2 cup uncooked long grain white rice
1/2 tsp. Italian seasoning or dried thyme
Salt and black pepper, to taste
- Heat oil in a Dutch oven over medium-high heat. Add onion and garlic and cook 3 to 5 minutes or until onion is softened, stirring frequently.
- Add remaining ingredients; bring to a boil over high heat. Reduce heat to medium and simmer, uncovered, 15 minutes or until rice is cooked. Add additional water or broth for a thinner soup, if desired.
